1. Shelter cats are the best. I've had four shelter cats, and they've all been exactly as you describe.
They say neutered males are the sweetest and happiest. I concur.
2. Definitely a mutt. You need to get a mixed breed kitten as soon as they are weaned. Find the one that is playful, but not too rough, and not too limp. Take them to a vet to make sure they are healthy, get their shots, etc. Then raise them like they are your child, and you will have a great pet!
3. Maine Coons ! Very loyal friendly, and fun loving.
4. I think you want a dog.
5. Any cat of any breed has the capacity to fulfil that requirement. It's not the cat that determines how it interacts with humans; it's the humans response to the cat.
6. You want a good old domestic short hair cat. Males are sweeter than females. The all grey ones are sweetest in temperament. The tuxedo cats are very intelligent and loving too. Of the actual breeds, the ragdoll and Maine Coon cats are the sweetest tempered and not noisy. Siamese are fun but can be really loud.
7. It really doesn't matter the breed as long as you get it as a kitten just make sure it's healthy. We had a mother have a litter of six kittens in our back yard and I fed them and they "adopted" me. They are out door cats but they still live in our back yard.
8. Get one from a Shelter Hun,you'll be helping it twice.
9. Breed has nothing to do with it. Go to a shelter and find an adult cat that most responds to you - of any breed or of no particular breed. With kittens you have no way of knowing what the personality will be like. With adult cats it's right there before you.
